Causes for sticking and how to avoid it

Learn the tips once, and be free from sticking forever.
Your food may stick and burn on the pan if you are not familiar with cast iron products and iron frying pans.
Learning the cause of burns and sticking and knowing the key affecting factors will help you get the knack of it. Unlike the non-stick coated pans, once you learn the tricks, you will be free from the sticking and burns forever.

First, clean off the burns!

Burns are left on surface if you feel roughness with your hand.
Remove all stubborn burns accumulated over time using hard sponge, wire sponge, or scouring powder.
Rinse well after polishing, dry it over the heat, coat the surface with the oil absorbed kitchen paper, and store.

Simple 4-step heating process

(1)Heat the empty pan at high heat for 1 minute (medium heat or lower for IH cooking stoves).

(2)Turn off the heat.

(3)Pour in a necessary amount of oil for cooking and coat the surface for 20 to 30 seconds.

(4)Turn the stove again, and reheat the pan at medium heat and add food ingredients.

Why?

(1)Heating the pan well will help with oil absorption.
Oil will blend in easier on hot pans.

(2)Stop the heat to lower frying pan to the optimal temperature.
Our pan / Wok is known for great heat transmission, but continued heating will rise the temperature too high.

(3)Food tends to stick where oil is not well absorbed.
Foods sticks where it is not well greased on the surface. If oil added was not enough, spread the oil using kitchen paper to coat overall surface.

(4)Medium heat is enough heat for cooking
Medium heat cooks food well if the pan is preheated.

Adjusting heat and handling the pan may be difficult at first if you are used to using non-stick coated resin treated products. But once you learn the knack of heating cast iron pan, you will be free from the sticking forever.
